“Eating the Rainbow” is a statement which certainly fits with this healthy dish! This free dieting recipe is super nutritious and rich in fiber. This dish is for two persons, all vegetarian and very cheerful. Tip: Delicious with a peasant sandwich there!
- 1 sweet potato
- 1/2 zucchini
- 1 bell pepper
- 1 broccoli
- 80g bulgur
- Vegetarian meatballs
Peel and cut the sweet potato, zucchini and broccoli and wok it in a large pan with some (coconut) oil and seasonings (basil, salt, pepper, rosemary, thyme).
- Cook the bulgur in twice as much water.
- Cut the vegan meatballs in half and cook them in a skillet.
- Do as everything is cooked in two bowls, cut the peppers and add some salt there too. Done!
Good appetite! You can also eat half and save the other half in the fridge for the next day. Delicious for lunch or after workouts when your body seriously need something healthy!
